Adobong Octopus/Squid

Another Adobo dish using octopus or squid as the main ingredients,  with soy sauce, vinegar, salt, onions, garlic. Cooking this adobo dish (octopus), I recommend that you remove the ink sack, and when cooking this dish you must be careful of your time not to over cook it. Octopus meat when over cooked its texture hardens.


Ingredients:

  • 1 kilo baby octopus, rinsed and cleaned well
  • 5 cloves garlic, minced 
  • ¼ cup of vinegar 
  • ¼ cup of water
  • 1 tsp. sugar  
  • 1 tsp. salt 
  • 1/2 tsp. freshly ground black pepper 
  • 3 bay leaves 
  • 3 tsp. vegetable oil 
  • 1 medium size onion, thinly sliced 
  • Optional: Garnish: chopped green onion 
 Procedure:
  1. Rinse well the octopus.
  2. In a bowl; combine all garlic, vinegar, water, soy sauce, sugar, salt, pepper and bay leaves. 
  3. Marinate squid/octopus 1/2 hour. 
  4. In a pan heat the cooking oil over medium high heat, then saute onions.
  5. Mix in the squid/octopus with marinade. Continue to cook on medium high heat until no juices remain, about 10-15 minutes. Do not overcook.
  6. Optional: Garnish with green onion. 
  7. Serve hot, share and enjoy
