Chicken Afritada

Filipino Chicken Afritada.

I just remembered how my grandmother uses to cook chicken afritada, the smell that surrounds the kitchen. Seeing her cook while singing her favorite Jose M Chan song with a bit of swaying while moving the pan and stirring the Afritada.

The taste of the Afritada that stays on your tongue and recorded to your brain. Hehehehe sorry got lost. By the way, my grandma's Afritada is one of the best dishes I ever tasted. That one of the things I miss when he visits us here in our province.

So here we go this is how I make my own chicken afritada. Let us cook Filipino Chicken Afritada, to prepare this dish you'll need this


INGREDIENTS:
1 Kilo chicken
6 potatoes (medium sized)
2 red onion
4 garlic cloves
2 green bellpepper
2 red bellpepper
3 cups chicken broth
1 1/2 cup tomato sauce
3 tablespoons cooking oil
HOW TO PREPARE:
1. Cut the chicken into pieces. serving size
2. Peel the potatoes and cut into cubes
3. Dice the 2 red onion.
4. Mince the 3 cloves of garlic.
5. Slice the bell peppers into strips/square
HOW TO COOK:
1. In a pan, heat the cooking oil.
2. Sauté the garlic and onions.
3. Put-in the chicken pieces and cook until slightly brown.
4. Pour-in the 1 1/2 cup of tomato sauce and 3 cups of chicken broth.
5. Bring the mixture to a boil, then reduce heat to simmer for 20 minutes.
6. Add potatoes and cook for about 15 minutes or until both the chicken and potatoes are cooked.
7. Put-in/Add the green and red bell peppers.
8. Take the pan off the heat after two minutes or before the bell peppers get overdone.
Season with salt and pepper.
Serve hot and enjoy!
