Chicken Sisig

Some Sisig is of Pork jowls,  ears, and liver. Sisig is a popular Filipino dish known to be one of the best PULUTANS, usually seasoned with calamansi and chili peppers. Having a small business cooking/preparing this sisig recipe adds income to the business, while lots of people look for PULUTAN, Sisig is the first thing on my customer's mind to order. It is easy and has less time to prepare.

Daily I prepare Chicken Sisig for our small Lechonan business. I'll be sharing with you how I simply prepare my Chicken Sisig. To prepare the Chicken Sisig we will need this.
Ingredients:
1 pcs grilled chicken breast, chopped small
1 cup minced yellow onion
1 tsp garlic powder
3 pcs long green chili (Siling Haba) ,sliced diagonally
2 tbsp soy sauce
¼ cup butter
4 tbsp mayonnaise
1 egg
Salt and Pepper to taste
3 tablespoons cooking oil
1 pc of Calamondin (Kalamansi)
Instructions:
  1. Heat the cooking oil in a pan
  2. When the oil is hot, saute the onion until it becomes lightly soft
  3. Put-in the chicken liver. Cook until the liver turns brown.
  4. The put-in the grilled chopped chicken breast. Stir and cook for 5 to 8 mins.
  5. Mix the garlic powder and soy sauce in. and Stir
  6. Add a pinch of salt and pepper. and Stir.
  7. Add the mayo and then stir until all are well incorporated.
  8. Heat the sizzling plate (cast iron pan).
  9. Once the pan is hot, put the butter in and let it melt.
  10. Tranfser your chicken sisig on the cast iron pan or plate.
  11. Crack the egg and drop on top of the chicken sisig.
  12. Arrange the sliced green chili and Calamondin (Kalamansi) on top.
  13. Serve Hot. Share and enjoy!
