FRIED CHICKEN

Here is another dish I learned from my Tita, Fried Chicken some or many of us love to put in our table.
FRIED CHICKEN
Ingredients
3 tablespoons garlic salt
1 1/2 tablespoon paprika
2 teaspoons pepper, divided
2-1/2 teaspoons poultry seasoning
3 large eggs
1-1/2 cups water
4 cups all-purpose flour, divided
1 1/2 teaspoon salt
2 broiler/fryer chickens (3-1/2 to 4 pounds each), cut up
Oil for deep-fat frying
Directions
1. In a large resealable plastic packaging bag, combine 3-2/3 cups flour, garlic salt, paprika, 1/2 teaspoons pepper and 1 ½ teaspoons poultry seasoning. In a shallow bowl, beat eggs and water; add salt and the remaining flour and pepper. Dip chicken in egg mixture, then place in the bag, a few pieces at a time. Seal bag and shake to coat.
2. In a deep-fat fryer, heat oil. Fry chicken, several pieces at a time, for 5-7 minutes on each side or until golden brown and juices run clear. Drain on paper towels.
For the Gravy you'lll need this:
Ingredients
1/2 cup all-purpose flour
1 cup water, or as needed
1 (3 pound) roasted chicken (drippings from chicken)
Directions
1. Add water to the chicken drippings to make about 1 1/2 cups of liquid in the bottom of the roaster.
2. Whisk water into the flour until it is thick, but not pasty. Whisk the flour/water mixture into the drippings, and put the roaster on the stove over medium heat. Stir constantly until mixture is thickened and bubbly. Add salt and pepper to taste.
