Lumpiang Shanghai

Just wanted to share how we cook/make Lumpiang Shanghai. to do this you'll need patience in rolling up the mixture in the Lumpia wrapper. This crunchy dish will make your mouth watering for more, This dish is best to serve with a Vinegar mixture (Spiced vinegar) of red onions, Red birds eye chili, pepper, salt and a bit of sugar for taste.
Ingredients
1/2 kilo Pork meat minced
1 pc. medium size red onion, minced
1 small carrot, minced
2 tbsp soy sauce
2 egg
a bit tsp iodized salt
ground pepper
50 pieces lumpia wrappers
1 cup vegetable oil
Cooking Procedure
In a deep bowl, combine minced pork meat, onion, carrot, salt and ground pepper.
Add in soy sauce and eggs. slowly stir them in with the pork meat mixture until everything is joined together. Taste and add salt and ground pepper to your taste
Take about 1 tbsp of the fillings and wrap it with the lumpia wrapper. Continue rolling and wrapping until you consumed all the mixture. This mixture will make about 50 pieces lumpia rolls.
In a frying pan, heat the oil and fry the spring rolls in groups. Cook in moderate heat and flip every rolls until it is golden brown on both sides.
Then drain excess oil from the fried lumpiang shanghai using some table napkin placed on a plate.
Transfer. Serve hot and crispy with the vinegar sauce mixture (spiced vinegar) or you could just buy a chilli sauce in the market
