PINAKBET

A Recipe made of vegetables that will surely become one of your favorite dishes, having vegetable shrimp paste and a bit of pork a unique taste of mix ingredients for you and your family. It is said that lot's of children does not love a Vegetable Recipe, so we Parents need to be a bit tricky when cooking for our kids. Let's start with the Pinakbet Recipe, to prepare this dish we will need.

Ingredients:
  • 1 tablespoon oil
  • 2 small onion (chopped)
  • 2 cloves garlic (minced)
  • ½ pound pork belly (cut into small cubes)
  • 1 tablespoon shrimp paste
  • 3 medium tomatoes (chopped)
  • 2 ½ cups water
  • ½ small calabasa (cut into pieces)
  • 6 to 8 okra (each piece cut into 3 parts) remove the tip and end
  • ½ bunch long beans (each piece cut into into 1-2 inch lengths)
  • 1 ampalaya (bittermelon) seeds removed (cut into 1-inch thick)
  • 1 large eggplant, (cut into 1-inch thick)
  • salt and pepper to taste
Instructions

  1. In pot heat oil. Add onions and garlic and cook, until aromatic. Add pork and stir occasionally, until meat is lightly brown. Mix the shrimp paste and continue to cook, stir occasionally, for about 5 to 7 minutes or until shrimp is brown. Put-in the tomatoes and cook, for about 6 minutes or until softened.
  2. Add 2 ½ cups water and bring to a boil. Reduce the heat, put the cover and cook for about 15 to 20 minutes or until meat is soft/tender.
  3. Put-In squash and cook for about 2 minutes. Add okra, long beans, ampalaya and eggplant. Continue to cook for about 4 to 5 minutes or until vegetables are tender yet crisp.
  4. Add salt and pepper to taste.
  5. Serve with hot Rice and Enjoy
