Grilled Chicken (Lechong Manok)


Mang DOT'S Lechong Manok

One of Filipino’s all-time favorite dish the Grilled Chicken (Lechong Manok), this month the lechong manok is sold for about 200-220 pesos/pc, Christmas season is the best season for this recipe. We usually have this on our tables for Christmas Eve. This recipe which I learned from my old boss in a grilling house about 9 years ago. I added some of my own style for the taste. Now lets begin to prepare the Lechong Manok.



Ingredients
  • 1 whole chicken (Dressed)
  • 3 tablespoons of brown or white sugar
  • 1 cup soy sauce
  • 1 head garlic, minced
  • 3 tablespoons of calamansi juice or lemon juice
  • small amount of gin
  • 2 cups of tanglad (lemon grass) for stuffing
  • 1 teaspoon ground black pepper
Directions
  1. Marinate the whole chicken in soy sauce, calamansi juice, minced garlic, gin, sugar and pepper.
  2. Let stand marinate in the refrigerator for 3 hours.
  3. Stuff the chicken cavity with tanglad (lemon grass).
  4. Cook chicken on grill or in oven until golden brown
