Mang DOT'S Lechong Manok
One
of Filipino’s all-time favorite dish the Grilled Chicken (Lechong Manok), this month the lechong manok is
sold for about 200-220 pesos/pc, Christmas season is the best season
for this recipe. We usually have this on our tables for Christmas
Eve. This recipe which I learned from my old boss in a grilling house
about 9 years ago. I added some of my own style for the taste. Now
lets begin to prepare the Lechong Manok.
Ingredients
- 1 whole chicken (Dressed)
- 3 tablespoons of brown or white sugar
- 1 cup soy sauce
- 1 head garlic, minced
- 3 tablespoons of calamansi juice or lemon juice
- small amount of gin
- 2 cups of tanglad (lemon grass) for stuffing
- 1 teaspoon ground black pepper
Directions
- Marinate the whole chicken in soy sauce, calamansi juice, minced garlic, gin, sugar and pepper.
- Let stand marinate in the refrigerator for 3 hours.
- Stuff the chicken cavity with tanglad (lemon grass).
- Cook chicken on grill or in oven until golden brown
